The Solstice would occur whenever Celistia damn well pleases. So if it's on the Solstice, we actually have no idea when it is, because we have no idea when the Solstice is. And, for that matter, on a planet whose star orbits it, there would be no concept of year. The length of their year would be arbitrary, and would not match our own.

The main difference is that Merry has connotations of boisterousness and intoxication, which Queen Elizabeth I didn't like, and therefore she chose another term. It should also be noted that in Holland, some say Zalig Kerstfeest (Blessed Christmas) as opposed to Vrolijk Kerstmis (Merry Christmas). Another reason is that American English preserves older portions of the English language more often than British English. (Fall instead of Autumn is a good example.)
