Depends on if you read the wiki and follow it along. You will learn a lot by reading the wiki because when they explain something they almost always reference some further reading. I myself have learned a lot about the boot process, the kernel and my system in general. But you're right it's very easy to just follow the installation guide without actually learning something.
Convenience will be the only advantage on kali you will get every testing and penetration tools pre-installed whereas on debian system you have to install all the packages you need.
